Curried pork and Cheddar hot dogs

Ingredients

1 1/3 lb (600 g) lean ground pork
1 egg
1/2 cup (125 mL) breadcrumbs
1 1/2 tbsp (22 mL) curry
2 tbsp (30 mL) fresh cilantro, chopped
Salt and freshly ground pepper
1 1/4 cups (310 mL) Canadian Aged Cheddar, diced
1/3 cup (80 mL) raisins
2 tsp (10 mL) honey
8 hot dog buns or
8 pita breads
2 cups (500 mL) baby spinach, chopped
8 tomato slices

Preparation

Preheat grill to medium heat or oven to 425°F (220°C). In a bowl, mix the first 5 ingredients together. Season to taste.

Let meat rest in refrigerator at least 15 minutes to allow flavours to develop. Divide mixture into 6–8 portions and shape meat into cylinders small enough to fit inside a hot dog bun. Cook on grill for 10–12 minutes. Meanwhile, place a large square of aluminum foil on work surface. Cover with parchment paper.

Place Cheddar, raisins and honey on parchment paper. Cover with a second square of aluminum foil and seal the sides tightly. Cook on grill for 5 minutes. Heat the buns and fill with meat, Cheddar topping, spinach and tomatoes.

Note: Your choice of either white or coloured Canadian Aged Cheddar.

Cheese alternatives: Canadian Mozzarella, Gouda, Provolone.
