Coffee and Amaretto Marbled Cake

Ingredients

  • 1 cup (250 mL) softened butter
  • 1 1/3 cup (330 mL) sugar
  • 4 eggs beaten
  • 1 1/3 cup (330 mL) all-purpose flour
  • Pinch of salt
  • 1 tbsp (15 mL) baking powder
  • 3 tbsp (45 mL) Milk
  • 3 tbsp (45 mL) instant coffee diluted in 2 tbsp (30 mL) Milk
  • 1/4 cup (60 mL) cocoa powder
  • 2 tbsp (30 mL) Amaretto liquor
  • Lemon Icing
  • Icing sugar
  • Lemon juice

Preparation

Preheat oven to 350 °F (180 °C).

In large bowl, cream butter with sugar and stir in eggs. Set aside.

Mix flour, baking powder and salt. Beat flour mixture in butter mixture alternately with milk. Stir in Amaretto.

Pour half the butter and flour mixture in other bowl and stir in diluted coffee and cocoa powder.

Pour Amaretto mixture in a buttered tube pan. Top with coffee and cocoa mixture in circular-like fashion. Marble cake mixture with a knife.

Bake for 50 minutes or until toothpick inserted in centre comes out clean. Remove from oven and let stand for 10 minutes before removing from pan. Drizzle with lemon icing and garnish with grated orange rind.

Fast Lemon Icing:

In bowl, combine icing sugar with lemon juice with a fork. Add lemon juice or icing sugar until preferred texture.
