Ingredients

  • 1/2 (500 g) pkg of coarsely chopped President's Choice Bittersweet Rich Dark Chocolate
  • 1/4 cup (60 mL) President's Choice Normandy style butter
  • 1 cup (250 mL) 35 % whipping cream
  • 1/2 pkg (600 g) of President's Choice 6-berry Frozen Fruit Blend thawed
  • 2 tbsp (30 mL) icing sugar
  • 1 tbsp (15 mL) fresh lemon juice

Preparation

In heatproof bowl, set over saucepan of simmering water, melt chocolate and butter, stirring until smooth. Cool for 10 minutes.

Whip cream until soft peaks form. Fold cream into cooled chocolate mixture. Pour into 8 x 4 inch (20 x 10 cm) loaf pan lined with plastic wrap. Smooth surface with spatula. Cover pâté with plastic wrap. Refrigerate for 2 hours.

Berry Coulis

In blender, puree berries with juice, sugar and lemon juice until smooth. Add additional sugar or lemon juice to taste, if desired. Pass mixture through fine sieve to remove seeds.

Remove plastic wrap from pâté and invert onto cutting board. Using a warm knife, cut into 8 to 10 slices. Spread berry coulis evenly on 8 to 10 dessert plates. Place a slice of pâté on each plate.
