Chicken Caesar Salad

Preparation

What You Need

1 romaine lettuce, rinsed, patted dry and torn in pieces
1/2 cup (125 ml) grated Canadian Parmesan cheese
1/4 cup (60 ml) chopped, crispy cooked bacon
4 boneless skinless chicken breast halves
2 tbsp (30 ml) olive oil
Salt
pepper, to taste
Croutons

Caesar Dressing:
1 egg
2 garlic cloves
Juice of 1 lemon
1 tsp (5 ml) Dijon mustard
1 tbsp (15 ml) white vinegar
1/2 tsp (2 ml) salt
Freshly ground pepper
2/3 cup (160 ml) olive oil

Instructions

In skillet, sauté chicken in oil for 10 to 12 minutes, or until well done. Season to taste with salt and pepper. Cut each breast halves in 8 strips

In salad bowl, combine lettuce, grated Canadian Parmesan cheese, bacon and 3/4 cup (175 mL) of Caesar Dressing. Toss and set aside.

Caesar Dressing:
Beat egg, garlic, Dijon mustard and vinegar in food processor until smooth. Add salt and season to taste with pepper. Stir in olive oil with food processor on low speed. Set aside.

Divide Caesar Salad among 4 serving plates and top with croutons. Arrange chicken strips on salad and garnish with lemon wedges and fresh parsley.
