Ingredients

2/3 cup (160 mL) all-purpose flour
1/2 cup (125 mL) whole-wheat flour
2 tsp (10 mL) baking powder
1/4 tsp (1 mL) salt
1 cup (250 mL) grated marbled Cheddar cheese
2 eggs
1/2 cup (125 mL) Milk
1 tbsp (15 mL) vegetable oil
1 green onion, chopped
1/2 onion, chopped
1/4 tsp (1 mL) salt
1/2 tsp (2 mL) pepper
1 tsp (5 mL) dry mustard

Preparation

Preheat oven to 350 °F (180 °C). Butter muffin tins.

Combine first four ingredients in a big bowl and mix well. Stir in grated cheese.

In another big bowl, beat in eggs and whisk in seven last ingredients. Pour over dry ingredients. Stir until just moistened. Spoon into prepared muffin tins.

Bake for 15 to 20 minutes. Serve warm.

    This is a great recipe. Lovely and moist. I used aged cheddar and added 3/4 cup of chopped spinach. Loved it. Definitely a keeper and very adaptable.

    These are really nice and light. I cut the oil in half and substituted apple sauce. The recipe doubles really well I'm going to freeze half of them. I don't like onions so I omitted those but I think I will try adding garlic and/or herbs to mix it up next time.

    tHIS RECIPE DID NOT WORK OUT FOR ME BUT I SUGGEST ADDING FINELY CHOPPED GARLIC!

    very yummy and light - I didn't have green onions so made the recipe without it. They were great as is - I might use sharp (old) cheddar next time. Oh, and I did add 1/8 tsp of cayenne just because!
