Cheddar Potato Snacks

Preheat oven to 375 °F (190 °C).
Cut thin slice from ends of each potato; discard. Cut potatoes into 1/4 inch (5 mm) thick slices. Dry slices and place in single layer on lightly greased shallow baking sheet. Brush with melted butter; sprinkle with salt and pepper.
Bake 10 minutes or until potatoes are tender. Combine Canadian Cheddar cheese, bacon and onions. Spoon onto potato slices.
Bake 5 minutes longer or until cheese is melted.
Variations:
Swiss Cheeseand Ham Potato Snacks:
Use finely shredded Canadian Swiss cheese instead of Canadian Cheddar cheese. Substitute 1/2 cup (125 mL) finely chopped cooked ham for bacon.
