Cheddar Corn Fritters

Preparation

What You Need

1 cup (250 ml) fresh corn kernels or
frozen
1 egg, separated
1 tbsp (15 ml) flour
1/4 tsp (1 ml) salt
Pinch ground black pepper
1 cup (250 ml) shredded Sharp Canadian Cheddar* cheese
Butter

Instructions

In small saucepan, cook corn in small amount of boiling salted water 3 minutes or until tender-crisp; drain. In large bowl, combine corn, egg yolk, flour, salt and pepper. Add Sharp Canadian Cheddar cheese and toss to combine. In mixer bowl, beat egg white until stiff; fold in corn mixture.

In large frypan, heat a small amount of butter over medium heat. Drop large spoonfuls of corn mixture into frypan. Cook until golden brown on both sides, adding more butter to pan as needed. Serve immediately.


Tips

* Or you can use shredded Canadian Mozzarella, Colby or Gouda cheese.
