Cheddar Apple Muffins

Instructions
Combine flour, sugar, baking powder, salt and cinnamon in large bowl. Add and mix in cheese.
Beat eggs with apple juice; stir in butter and apple. Add all at once to flour mixture; stir just until moistened.
Divide batter among 12 large greased muffin cups. Bake 375 ºF (190 ºC) oven 25 to 30 minutes. Serve warm with butter.
Swiss Blueberry Muffins:
Substitute 1 1/2 cups (375 mL) shredded Canadian Swiss cheese for Cheddar, 1 cup (250 mL) milk for apple juice and 2 cups (500 mL) fresh or thawed, drained frozen blueberries for apple.
