Butterscotchy Almond Bars

Preparation

What You Need

1 1/2 cups (375 ml) all-purpose flour
2 tsp (10 ml) baking powder
1/2 cup (125 ml) butter
2 cups (500 ml) packed brown sugar
2 eggs
1 1/2 tsp (7 ml) vanilla
1 square semi-sweet chocolate

Nutty Topping:
1/4 cup (50 ml) butter
1/3 cup (75 ml) sugar
1/3 cup (75 ml) corn syrup
2 tbsp (30 ml) water
1/4 tsp (1 ml) salt
1 1/2 cups (375 ml) sliced almonds

Instructions

Combine flour and baking powder; set aside. Melt butter in large saucepan. Remove from heat; blend in sugar. Beat in eggs and vanilla. Stir in flour mixture. Spread batter in a greased 13 x 9 x 2 inch (3.5 L) cake pan.

Bake in 350 ºF (180 ºC) oven 20 minutes. Spread Nutty Topping evenly over surface. Bake 15 minutes longer. Cool. Melt chocolate; drizzle over pan. Cut into bars.

Nutty Topping:

Melt butter in small saucepan. Add and mix in sugar, corn syrup, water and salt.

Bring mixture to boil; boil 4 minutes, stirring constantly. Stir in sliced almonds.

    Denise,

    I was afraid I would encounter this problem as well. After the topping had boiled for 4 minutes, I found I was still waiting for the bottom layer to finish baking. I kept the topping still cooking on a low-medium heat and continued to stir. As well, I did use as many nuts. In fact, only half a cup and found it made better results because it wasn't as thick but still delicious.

    I don't have a tip - I have a question. When I made the nutty toping (following the instructions EXACTLY) it was very stiff and difficult to spread over top of the half-baked bottom layer. I ended up putting the topping on in blobs, then baking for a few minutes to soften, then spreading with a knife, but it still didn't spread as evenly as I would have liked. Has anyone else had this problem? What's the solution?
