Breast of Chicken and Three-Cheese Sweet Potatoes

Ingredients

  • 3 cups (750 mL) sweet potatoes peeled and diced
  • 4 boneless, skinless chicken breasts
  • 2 tbsp (30 mL) melted butter
  • 2 tbsp (30 mL) butter
  • 1/2 onion finely chopped
  • 2 garlic cloves chopped
  • 1/2 tsp (2 mL) fresh ginger finely chopped
  • 1/2 tsp (1 mL) chili peppers crushed
  • 1/4 cup (60 mL) Canadian Havarti diced or grated
  • 1/4 cup (60 mL) Old Canadian Cheddar diced or grated
  • 1/4 cup (60 mL) Canadian Gouda diced or grated
  • Salt and ground pepper to taste

Preparation

Place the potatoes in a large saucepan, cover with water, add salt, and bring to a boil. Cook until the potatoes are tender, 8 to 10 min. then drain immediately.

While the potatoes are cooking, brush the chicken breasts with melted butter, season and cook for 20 to 25 minutes in a preheated oven at 400 °F (200 °C) or on a barbecue preheated to medium-high.

In the saucepan used to cook the potatoes, melt the butter and sauté the onions, garlic and ginger. Mix in the sweet potatoes and mash. Add the peppers, cheese and season to taste. Reheat the mixture over a low heat to melt the cheese. Serve the chicken breasts over the sweet potatoes accompanied by a green vegetable.

Tips

Suggestion:This recipe can be prepared with a single cheese by increasing the total quantity to 3/4 cup (180 mL).

Note: The three-cheese sweet potatoes can be prepared in advance and reheated at low heat while the chicken is cooking. This dish freezes very well.

Try it with Mozzarella, Provolone, Canadian Swiss, other Cheddar, etc.
