Banana French Toast

Preparation

What You Need

2 cups (500 ml) milk
4 eggs
1 medium ripe banana, peeled, sliced
2 tbsp liquid honey
1/4 cup (60 ml) frozen orange juice concentrate, thawed
12 slices day-old whole wheat bread
Butter
Sliced bananas
Maple syrup

Instructions

In blender container, combine milk, eggs, banana, honey and juice concentrate. Cover and blend a high speed until smooth.

Pour over bread slices in large pan. Turn slices of bread over once; cover and refrigerate at least 3 hours, preferably overnight.

In large frypan or electric skillet, melt a small amount of butter over medium heat. Cook bread until golden on both sides, adding more butter to pan as needed. Serve with sliced bananas and maple syrup.
