Aged cheddar turkey cutlets

Preheat oven to 350°F (180°C).
In a skillet over high heat, melt half the butter and sauté vegetables with shallot and garlic. Season and let cool.
Spread cooked, cold spinach and then the vegetables over cutlets and add Aged Cheddar sticks. Fold edges over filling and roll cutlets to trap filling inside. Tie or pin with toothpicks.
Melt remaining butter in skillet over high heat and quickly brown rolls on all sides. Set in ovenproof cookware.
Add white wine to hot skillet to collect juices, then pour over cutlets. Cook for 20 minutes.
Slice rolls diagonally before serving to reveal stuffing, and drizzle with cooking juices.
Tips
Recipe can be prepared in advance and baked at the last minute. Serve with cranberry sauce and traditional Holiday trimmings and side dishes. Veal and chicken are great meat alternatives, too.
Replace Aged Cheddar with Canadian Mild or Aged Gouda, Mild Cheddar, slices of Brie or crumbled Feta.

The spinach should be cooked then cooled before placing it in the cutlet. You can use your favourite method to cook the spinach either boiled, steamed or sautéed. You can even microwave it if you like by placing it in a covered microwave dish for a few minutes. Be sure to squeeze out the excess liquid before using.

Are we suppose to cook (boil) the spinach first? The recipe does not say to but in the video, she mentions cooked spinach? Please help :)

Hi, I just finished watching the video for this recipe, and the answer to your question is 350- for 20 minutes. The video is great, it really makes this recipe look easy!
