Onion Pie

Ingredients

  • 10 bacon strips cut in 1-inch (2 1/2 cm) pieces
  • 5 medium onions thinly sliced
  • 1 tbsp (15 mL) all-purpose flour
  • Salt and pepper to taste
  • 1 cup (250 mL) 15 % or 18 % cream
  • 4 eggs beaten
  • 1 short crust pastry
  • Ground nutmeg

Preparation

In skillet, cook bacon. Remove bacon strips and pat dry with paper towels. Reserve fat from skillet.

In skillet, cook onions in 4 tbsp (60 mL) bacon fat until tender but not brown. Stir in flour, salt, pepper and cream. Cook (without boiling) over medium heat, stirring constantly, until mixture thickens. Remove from heat and set aside.

Place eggs in bowl and stir in 3 tbsp (45 mL) warm onion mixture. Gradually stir in remaining onion mixture. Add cooked bacon. Mix well. Line pie plate with crust and pour in mixture. Sprinkle with nutmeg.

Bake in oven at 400 °F (200 °C) for 20 minutes. Let stand for 5 minutes before serving.
