Ingredients

  • 1/3 cup (80 mL) butter
  • 4 cups (1 L) fresh bread crumbs
  • 1 small head cauliflower
  • 1 small onion chopped
  • 2 eggs beaten
  • 1/2 cup (125 mL) all-purpose flour
  • 1/2 tsp (2 mL) salt
  • 1 cup (250 mL) Milk
  • 2 cups (500 mL) shredded Canadian Cheddar cheese

Preparation

Melt butter in large skillet. Add crumbs. Cook and stir over medium heat until toasted a light golden brown colour. Pack three-quarters of the crumbs evenly over bottom and side of buttered 9-inch (23 cm) pie plate.

Cook cauliflower and onion in lightly salted water until tender. Drain and coarsely mash to make 2 cups (500 mL).

Smoothly combine eggs, flour and salt; gradually stir in milk. Add mashed cauliflower and cheese to milk mixture. Pour into prepared crust. Sprinkle remaining crumbs over top.

Bake in preheated 350 °F (180 °C) oven 35 to 40 min or until set and lightly browned.

Tips

You can substitute 2 cups (500 mL) chopped broccoli for cauliflower.
