The Best Rice Pudding in the World

Preparation

What You Need

1/3 cup (80 ml) Arborio ( short-grain Italian) rice
2 cups (500 ml) milk
3 tbsp (45 ml) sugar
3 tbsp (45 ml) butter
Grated rind of 1 lemon
1 tsp (5 ml) cinnamon

Instructions

Preheat the oven to 250° F (120 °C).

Mix the rice, milk, sugar, butter and lemon rind together in a bowl and pour the mixture into a greased 2 qt. (2 L) baking dish. Bake for 2 hrs.

Sprinkle with cinnamon and serve hot or cold.

    I thought I would NEVER enjoy rice pudding and refused to try it anywhere after being served it in England at school lunch ( Yeccchhhh ) This was one of the first milk calendar recipes that I tried and YES YES YES this is one of the BEST and definitely the EASIEST dessert EVER. Everyone loves it and thinks it is an old family recipe .....I always double the recipe and add more freshly grated lemon peel. Only problem is we can't get enough of it and I had to stop making it so much !

    My son sent me the Milk Calendar in 1996, my first year back in England after 30 years in Canada, and this recipe was found there. I've made it ever since, my English hubby loves it as I do and I recently lost my copy, couldn't be sure of ther quantities so googled "the best rice pudding in the world," that I did remember and here we are - Hooray!!!

    This has been my favourite Rice Pudding recipe since it was first published. It is truly creamy. I find the results improve if you stir it a couple of times during the first hour.

    The best way to add raisins to this is to 'plump' them in hot water & lemon for about 4 or 5 minutes. Drain well & stir in just before serving pudding.
