Sweet and Sour Beef with Greens

Preparation

What You Need

1 lb (500 g) flank steak or
sirloin, thinly sliced
2 tbsp (30 ml) soy sauce
2 tbsp (30 ml) sherry or
orange juice
1 tsp (5 ml) cornstarch

Sauce:
1 cup (250 ml) milk
1/4 cup (60 ml) ketchup
2 tbsp (30 ml) soy sauce
2 tbsp (30 ml) vinegar or
lemon juice
2 tbsp (30 ml) brown sugar
1/4 tsp (1 ml) hot pepper sauce, or more to taste
3 tbsp (45 ml) cornstarch
1/4 cup (60 ml) vegetable oil
2 cloves garlic, chopped
2 tbsp (30 ml) chopped fresh ginger root
6 green onions, chopped
1 bunch broccoli, trimmed and chopped
1 green pepper, sliced
1 stalk celery, sliced
1 pkg fresh spinach, trimmed and chopped, (approx 3/4 lb/375 g)

Instructions

Combine beef with soy sauce, sherry and cornstarch. Marinate 10 min.

Meanwhile, combine milk, ketchup, soy sauce, vinegar, brown sugar, hot pepper sauce and cornstarch. Reserve.

Heat 2 tbsp (30 mL) oil in a wok or non-stick skillet. Add beef. Cook 2 to 3 min until browned. Remove from pan.

Wipe pan clean. Return to heat. Add remaining 2 tbsp (30 mL) oil. Add garlic, ginger and green onions. Cook 30 seconds until fragrant. Add broccoli, green pepper and celery. Cook 3 to 4 min. Add spinach. Cook just until wilted. Add beef to vegetables in wok.

Stir reserved sauce. Add to pan. Cook until sauce comes to a boil and thickens. Serve with steamed rice or noodles.


Tips

If you're in a hurry, leave out the broccoli and spinach and use twice the quantity of green pepper and celery.
