Scalloped Potatoes au Gratin

Preparation

What You Need

2 tbsp (30 ml) butter
2 cups (500 ml) milk
1 cup (125 ml) Canadian Neufchâtel cheese or
Canadian soft cheese aux fines herbes
1 cup (250 ml) grated Canadian white Cheddar
1/2 lb (250 g) sliced mushrooms
4 green onions, chopped
Dash of nutmeg
A bit of fresh thyme
Salt
Pepper
6 Quebec new potatoes
1 cup (250 ml) bread crumbs

Instructions

Wash potatoes and finely slice.

Melt butter and sauté mushrooms and green onions 2 or 3 minutes on low/medium heat. Set a side.

Slowly heat milk and Canadian Neufchâtel cheese or Canadian soft cheese aux fines herbes for a few minutes, stirring constantly. Add nutmeg, thyme, salt and pepper. Cook until thick and smooth.

Arrange potatoes in a gratin platter, and pour cheese mixture on top. Sprinkle with Canadian Cheddar cheese and bread crumbs and bake at 180 °C (350 °F) for 15 to 20 minutes.
