Quick and Tasty Beef Quesadillas

Preheat oven to 450 ºF (220 ºC).
In large non-stick skillet, heat oil over high heat; cook sirloin strips, garlic, chili powder, cumin and coriander, stirring for 3 min or just until browned.
Whisk flour into milk until smooth; stir into skillet. Reduce heat and simmer, stirring, until liquid is bubbling and thickened, 5 min. Remove from heat. Stir in 3/4 cup (180 mL) of the Canadian Monterey Jack or old Cheddar cheese until melted and the salt.
Spread one-eighth of the beef mixture on half of each tortilla; top with tomato slices and remaining Canadian Monterey Jack or old Cheddar cheese. Fold over tortillas into a half-moon shape. Place on large baking sheet. Bake for 5 min or until filling is hot and tortilla is crispy. Cut into wedges.
Tips
This recipe can be doubled to make more quesadillas - perfect for a party.
For the Adventurous: Add 1 jalapeno pepper, minced with beef or use Canadian jalapeno-flavoured Monterey Jack cheese for extra kick. Add thin slices of avocado sprinkled with lime juice along with tomatoes.
