Oriental Barbecued Pork with Pineapple Peanut Sauce

Preparation

What You Need

1 1/2 lbs (750 g) lean pork

Soy Marinade:
1/4 cup (60 ml) oil
1/4 cup (60 ml) soy sauce
2 tbsp (30 ml) lemon juice
1 tsp (5 ml) sugar

Pineapple Peanut Sauce:
1/2 cup (125 ml) shredded coconut
1 cup (250 ml) hot milk
2 tbsp (30 ml) butter
1 onion, chopped
1 garlic clove, minced
1 tsp (5 ml) curry powder
1/2 tsp (2 ml) ginger
1/2 cup (125 ml) drained pineapple, chopped finely or crushed
1/4 cup (60 ml) crunchy peanut butter

Instructions

Slice pork in thin strips or cubes; toss with soy marinade; let stand one hour or more.

Pour milk over coconut; let stand 15 min.

Heat butter in a saucepan, add onion and garlic; cook until softened. Stir in curry powder and ginger. Add milk and coconut, pineapple and peanut butter; cook, stirring constantly, until thickened.

Thread pork on small skewers. Barbecue or broil until well-browned and cooked (approx. 5 min). Serve with warm sauce.
