Combine graham cracker crumbs with cinnamon and butter. Press into the bottom of a 9-inch (23 cm) springform pan.
For the filling, beat cheese with sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream. Pour over crust.
Bake in a preheated 350 °F (180 °C) oven for 45 to 50 min or until just set when gently shaken.
Combine sour cream with sugar and vanilla. Spread over hot cheesecake. Bake 5 min longer. Chill thoroughly before serving.
Tips
To cut this cake easily, dip knife into very hot water and wipe dry before slicing.
