Indian Chicken and Avocado Salad

Preparation

What You Need

1 lb (500 g) skinless boneless chicken breast
1 tbsp (15 ml) curry powder
2 tbsp (30 ml) olive oil
2 tbsp (30 ml) butter
1/4 cup (50 ml) fresh orange juice
2 cups (500 ml) mache lettuce (lamb's lettuce)
16 peeled orange segments, cut in 2
2 cups (500 ml) diced avocado flesh
1/4 cup (50 ml) olive oil

Instructions

Sprinkle chicken breast with curry powder. In skillet, sauté chicken in oil and butter for 5 to 6 minutes on each side. Slice chicken breasts crosswise and set aside. Pour orange juice in skillet, scraping bottom with a spatula.

Arrange mache leaves in serving plates. Top with orange segments, avocado and chicken slices. Sprinkle with reserved juice and olive oil. Garnish with fresh herbs and serve with pita bread.
