Holiday Pot Pie

Preparation

What You Need

2 tbsp (30 ml) butter
1 celery stalk, chopped
2 carrots, sliced
1 cup (250 ml) frozen green peas
3 cups (750 ml) chicken broth
2 cups (500 ml) milk
1/3 cup (80 ml) all-purpose flour
3 cups (750 ml) diced cooked chicken or
turkey
Few pinches of grated nutmeg
Salt
Pepper
1-2 Pie crust dough

Instructions

In saucepan, sauté celery and carrots in butter for 5 minutes over medium-high heat. Stir in broth and peas. Add milk and bring to boil. Thicken with flour, stirring constantly.

Add chicken, or turkey, and grated nutmeg and season to taste. Simmer, stirring until mixture thickens. Pour into large oven-proof baking dish, or individual ones, and cover with crust. Seal well and bake in oven on baking sheet at 400 °F (200 °C) for 30 to 35 minutes. Remove from oven and serve.
