Hearty Vegetable Chowder

Preparation

What You Need

2 slices bacon, diced
1/2 cup (125 ml) chopped onion
1 can (10 oz/ 284 mL) beef broth
1 can (14 oz/ 398 mL) spaghetti sauce
1 cup (250 ml) water
1/4 tsp (1 ml) dried basil leaves, crushed
2 cups (500 ml) frozen mixed vegetables or
fresh
1/2 cup (125 ml) spiral-shaped pasta
2 cups (500 ml) milk
2 tbsp (30 ml) flour
Salt
Pepper, to taste
Grated Canadian Parmesan cheese, to taste

Instructions

Cook bacon until crisp in large saucepan; drain; reserve drippings. Set bacon aside. Cook onion in bacon drippings until tender.

Stir in beef broth, spaghetti sauce, water and basil. Add vegetables and pasta. Bring to a boil. Reduce heat, cover and simmer 10 min or until vegetables are tender.

Combine milk and flour until smooth. Stir into chowder. Cook and stir until mixture comes to a boil and thickens. Add salt and pepper to taste.

Sprinkle reserved bacon and Canadian Parmesan cheese over each serving if desired.


Tips

Microwave Method: Place bacon in 4-qt/ 4 L glass bowl. Cook, loosely covered, on HIGH (100 %) 3 to 4 min or until crisp. Drain bacon; reserve drippings. Add onion to drippings in bowl. Cover with vented plastic wrap. Cook on HIGH (100 %) 2 1/2 to 3 min or until tender; stir once. Stir in beef broth, spaghetti sauce, water and basil. Add vegetables and pasta. Re-cover. Cook on HIGH (100 %) 15 min or until pasta is cooked; stir 3 times. Combine milk and flour until smooth; stir into bowl. Cook, uncovered, on HIGH (100 %) 4 to 5 min or until mixture boils and thickens; stir twice. Complete as above.

Tested in 700 watt oven.
