Cheddar Scones

Preparation

What You Need

2 1/4 cups (550 ml) all-purpose flour
4 tsp (20 ml) baking powder
1 tbsp (15 ml) sugar
1 tsp (5 ml) salt
1/2 cup (125 ml) butter
1 egg, beaten
1 cup (250 ml) milk
1 cup (250 ml) shredded Canadian Cheddar cheese, divided
1 egg yolk, beaten
Poppy seeds

Instructions

Preheat oven to 450 °F (230 °C).

In large bowl, combine flour, baking powder, sugar and salt. Cut in butter with pastry blender or two knives until mixture is crumbly. Stir in egg, milk and 3/4 cup (175 mL) of the Canadian Cheddar cheese, stirring just until moistened.

Turn out on a lightly floured board and knead gently about 20 times, adding more flour to dough if necessary.

Place dough on ungreased baking sheet. Pat or roll out to 8 inch (20 cm) circle. Cut into 8 wedges but do not separate. Brush with egg yolk and sprinkle with poppy seeds.

Bake 12 minutes or until golden. Remove from oven and sprinkle with remaining Canadian Cheddar cheese. Return to oven until it is melted.
