Basic White Sauce
In a heavy saucepan, over medium heat, melt butter and blend in flour and salt. Gradually add milk, stirring constantly for 10 minutes, until smoothly thickened, and sauce comes to a boil.
Savoury Sauces
Start with the basic white sauce, then add the extra ingredients:
Cheese Sauce:
Blend in 1/2 to 1 cup (125-250 mL) grated Canadian Cheddar cheese; stir until melted.
Mustard Sauce:
Add 1 tbsp (15 mL) prepared mustard.
Summer Sauce:
Add 1 tbsp (15 mL) each snipped fresh parsley and thinly sliced green onions.
Curry Sauce:
Add 1/2 to 2 tsp (2-10 mL) curry powder to taste.

While you are melting butter, gently cook 1/2 tsp garlic powder or 1 clove of garlic, finely chopped and make sauce as directed. Serve over pasta.
