Bacon, Tomato and Cheese Stack-Ups

Preparation

What You Need

6 eggs
1/4 cup (50 ml) milk
1 tbsp (15 ml) finely chopped green onion
1/4 tsp (1 ml) seasoned salt
3 tbsp (45 ml) butter
8 slices side bacon, cooked
4 English muffins, split, toasted, buttered
8 slices tomato
8 slices Canadian Cheddar* cheese

Instructions

In medium bowl, lightly beat eggs. Stir in milk, onion and salt.

In large frypan, melt butter. Add egg mixture; cook and stir over low heat until eggs are cooked as desired. Cut each slice of bacon in half. Distribute bacon, tomato and egg mixture evenly among muffin halves.

Cut Canadian Cheddar cheese slices in half diagonally and arrange over eggs. Broil until cheese is melted.


Tips

This easy 'breakfast on a bun' tastes great made with cooked sausage patties or sliced cooked ham.

* Or you can use slices of Canadian Colby, Brick or Mozzarella cheese.

    A sun-side egg with yolk soaked in the muffin when you bite gives alternate great taste
