Apple Spice Snacking Cake

This cake can be whipped up in no time with ingredients from your kitchen cupboard. Everyone will love the sweet aroma of apple and cinnamon wafting through the house as it bakes.

Preparation

What You Need

1/3 cup (80 ml) butter, softened
1 cup (250 ml) sugar
3 eggs
2 tsp (10 ml) vanilla extract
3/4 cup (180 ml) unsweetened applesauce
3 1/2 cups (875 ml) all-purpose flour
1 tbsp (15 ml) baking powder
2 tsp (10 ml) cinnamon
1 tsp (5 ml) baking soda
1 tsp (5 ml) ground ginger
1/2 tsp (2 ml) salt
1/2 tsp (2 ml) nutmeg
1 1/4 cups (310 ml) milk
2 cups (500 ml) chopped peeled apple, (about 2 large)

Glaze:
2/3 cup (160 ml) icing sugar
1 tbsp (15 ml) lemon juice

Instructions

Preheat oven to 350 °F (180 °C). Line 13 x 9-inch (33 x 23 cm) metal cake pan with foil and lightly butter or spray pan.

In bowl and using electric mixer, beat butter with sugar. Beat in eggs, once at a time, then vanilla and applesauce. In separate bowl, combine flour, baking powder, cinnamon, baking soda, ginger, salt and nutmeg; stir into egg mixture alternately with milk. Stir in apples.

Pour into prepared pan. Bake for 35 to 40 min or until tester inserted in centre comes out clean. Let cool in pan on rack for 15 min. Invert pan and turn out cake; remove foil from bottom. Turn right side up on rack and let cool completely.

Glaze:
In small bowl, whisk icing sugar with lemon juice until smooth, then using fork, drizzle over cake.


Tips

Choose a cooking apple that holds its shape during baking, such as Northern Spy, Crispin (Mutsu), Idared, Granny Smith, or Golden Delicious. If using a glass baking dish instead of a metal cake pan, decrease oven temperature to 325 °F (160 °C) to prevent overbaking.
