The simple things in life can often be the best. Take butter, for instance. Though it can easily be taken for granted, it can make a great variety of dishes even more flavourful

Pan-frying with butter, for instance, makes food much crispier and tastier, as the butter helps with browning in ways that oils and margarine won't. And those nice, slightly caramelized flavours have been a favourite with food lovers... pretty much since the dawn of cooking.

Here are a few ideas for enhancing your favourite dishes:

  • Take macaroni and cheese to a whole new level by dabbing the pasta with butter before putting it in the oven.
  • Work wonders on steaks and other grilled meats with a small square of homemade flavoured butter containing your favourite mix of herbs and spices.
  • Make simple sauces more unctuous and satisfying. If you're deglazing a pan with wine, for instance, mix in a teaspoon of butter just before serving.
  • Top off pancakes or waffles in style with sweet flavoured butters.
  • Turn a plain cake into something much more exciting with a quick and easy butterscotch sauce.
  • Add an extra layer of flavour to a simple open-faced apple pie by placing small dollops of unsalted butter here and there when it's fresh out of the oven.

Small amounts of butter can make a big difference in the pleasure you'll get from your favourite dishes. A little butter really does go a long way.
