Heavy Cream: A thick cream with at least 36% M.F. It whips more easily and holds its shape longer than Light Whipping Cream. For most uses, Canadian 35% Whipping cream or 35% Country-style cream can be substituted.
L
Light Cream: Also known as coffee cream or table cream and contains at least 18% M.F. but less than 30%. Depending on the use, Canadian 15%, 18% or 35% cream can be substituted.
Light Whipping or Whipping Cream: Cream with at least 30% M.F. but not more than 35% M.F.. Canadian 35% Whipping cream can be substituted.
