How Cheese is Made

Cheese is fermented milk from which a portion of the water and lactose has been removed.

There are 4 basic steps to making cheese:

  1. Curdling
  2. Draining
  3. Pressing
  4. Ripening

Once these 4 steps are complete, the cheese has been made! The unique flavor of each type of Canadian cheese type is due to one or more of the following:

  • The kind of milk used
  • The method of curdling milk
  • The method of cutting and forming of the curd
  • The type of bacteria or moulds used in ripening
  • The amount of salt or seasonings added
  • The conditions of ripening
