Cultured Butter
Cultured Butter is butter made from cream that is cultured with active bacteria (similar to yogurt) and has a distinctive, slightly tangy taste. It can be used interchangeably with regular butter in cooking where the tangy taste will complement the recipe. Cultured butter has a longer shelf life than traditional churned butter and is available in salted and unsalted versions. Cultured butter is common in Europe and is becoming increasingly available in Canada. It may also be called “Old Fashioned” or “Antique”.
