BBQ season is finally back! This season it’s time to try something new and out of the ordinary. Get creative with foods like fruit, pizza and dessert cooked right on the grill. The result is a delicious alternative to regular barbeque fare that will delight your family and friends.
Living in a cooler climate, barbeque season is relatively short. The first rays of sunshine that appear in the spring mark the beginning of barbeque season! Most of us enjoy reminiscing about the mouth-watering, juicy, tasty hamburgers of our youth. And few are those who do not appreciate this type of cooking, which transforms the most ordinary cuts of meat and fish into a delicious feast with every bite.
Smoke brings out the taste of foods. Cooking over a live flame is a widely used technique and probably the oldest one in existence. This type of cooking is best suited to small cuts of meat, fish or poultry (steak, hamburgers, brochettes, cutlets, fish steaks, chicken wings and breasts, etc.). In fact, you can cook pretty much anything on a barbeque! We see more and more recipes for preparing food on the grill: vegetables, pizzas, paninis, even fruits and desserts! So this summer, why not take advantage of the beautiful weather to get outside and try out some new recipes for your barbeque!
Milk products, a perfect match for your barbeque!
Whether in a marinade, for basting, to accompany grilled foods or to prepare delectable sauces, milk products make inseparable grilling allies. Easy to make, flavoured butters are as practical as they are delicious for basting the leanest cuts of meat and fish, keeping them moist with a rich texture and the wonderful taste of butter. With its slightly tangy flavour, yogourt is an essential ingredient for marinades used in Mediterranean-style grilling, as well as when making light and tasty sauces. And of course, then there’s cream, which when whipped and flavoured with a few herbs and seasonings will enhance and refine the taste of any meat, poultry, fish or vegetable dish.
Calm your sweet tooth with a dessert on the grill
Conclude your summer meal beautifully and sweeten your tooth, with a wide range of mouth-watering possibilities for barbequed desserts. They’re a piece of cake!
Ripe, sweet pineapple, pears and peaches are simply irresistible and are sure to charm your taste buds when grilled and caramelized on the barbeque. Cut the fruit and either cook it directly on the grill, wrap it in tin foil, or prepare as brochettes. For a more decadent option, melt a bit of chocolate and drizzle over grilled fruit. For more variety, grill slices of pound cake or angel food cake a few minutes on each side and baste with a bit of butter, if desired. Serve the cake with the fruit and top off with a large scoop of your favourite ice cream or a spoonful of whipped cream, flavoured with a touch of vanilla.
Tips and tricks
- After cooking, allow the meat or poultry to rest a few minutes before serving. This will allow the juices to redistribute and be reabsorbed for a juicier and tastier meal.
- For perfect scoring, simply turn meat (steak, cutlets, etc.) or fish steak 90 degrees and flip one time only.
- Always ensure you have enough fuel before starting to barbeque. Is there anything more frustrating than realizing half way through cooking that your tank is empty?
