It's Not Just Cheese and Red Wine

A platter of cheese can be a great part of your dinner and party. There's a wide variety of Canadian cheeses to choose from, and just as many perfect pairings to go with them.

So you've got your platter all picked out, with a delicious selection of hard and soft cheeses, semi-soft and blue. Now, what to drink?

Generally, the first pairing that comes to mind is red wine. A classic, in many ways, but far from the only option available.

White wines and beyond

The Swiss, who know a thing or two about cheese, serve their famous melted cheese dishes - raclette and fondue - with crisp, fresh white wines that liven up the meal and make it go down smoothly.

It doesn't stop there:

  • Dessert wines like ice wine, another great Canadian specialty, go very well with more intense varieties like blue cheese.
  • Beer can also be a great match, with rich Belgian-style beers or refreshing lagers all bringing their own contribution to the pairings.
  • Apples and cheese are a natural match, and so is cider, from the light, bubbly kind to the rich, luscious ice cider.
  • Sherries and madeiras add extra layers of nutty, complex flavours when paired with aged firm cheese.
  • Champagne and sparkling wines with lighter, fresh cheeses are also good options.

Wines for every cheese?

And what about that red? Just try to avoid wines that might be too tannic and concentrated, as they could make the cheese feel a little harsh. Fruity, fresh and supple - in reds and whites - provide the most versatile match.
