A little appreciation goes a long way

What could be more simple, universal or in better taste? Choose small, easy-to-wrap wheels, like Bleubry, Gamin, Le Délice des Appalaches, Mamirolle, Sir Laurier d’Arthabaska and Triple-Cream Brie. For a surprising twist, choose a Canadian Brie or Camembert and prick it deeply. Fill the holes with Cognac or Sherry and decorate with nuts and candied fruits. Cover and chill for at least two days.

A reminder of your culinary talents

Offer your guests your own cheese fondue mix. Shred about 1 cup each of Canadian Emmental, Swiss-type Cheese and mild Cheddar. Add 2 tbsp. of flour, a pinch each of nutmeg and cayenne, and stir well. Seal mixture in a container and include the directions written on a pretty card.

Directions: Run inside of fondue pot with a clove of garlic. Pour in 175 mL of dry white wine and heat until it starts to simmer. Add handfuls of cheese mixture and stir after each addition until melted. Makes 2 servings.
