Sunken Blueberry Oatmeal

As soon as I saw this recipe, I thought about creating something that would be easy for a family to make on a Sunday morning. I wanted to create an oatmeal dish that would please both parents and kids, so I thought of individual pots of creamy, baked cinnamon oatmeal with berries on the bottom. With each spoonful, you would find the “sunken treasure”…beautiful little blueberries! I called my recipe "Sunken Blueberry Oatmeal" and I must say, my husband and I LOVED it. Yum!

Preparation
What You Need
2 individual packets of Quaker 100% Whole Grain Oats (30 grams each)
6 tablespoons brown sugar
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
2 eggs
1 teaspoon vanilla extract
½ cup of 10% cream (half and half)
½ cup of milk
2 tablespoons butter, melted
Additional cream to serve at the table
Makes 4 individual servings
Instructions
In a bowl, mix the oats, 3 tablespoons of the brown sugar, baking powder, salt and cinnamon until combined.
In separate medium-sized bowl add eggs, vanilla, cream, milk and melted butter and beat lightly with a fork.
Add the dry ingredients to the wet ingredients and stir until combined. Immediately divide the oatmeal mixture evenly among the 4 prepared ramekins. Sprinkle the oatmeal-filled ramekins with the remaining 3 tablespoons of brown sugar.
Bake, uncovered, for 15 to 20 minutes at 375°F, until oatmeal is hot, bubbly and has risen slightly. Ramekins will be very hot, so handle them carefully!
Before serving, pour extra milk or cream into each ramekin for extra creaminess. Instruct everyone to dig their spoons down into the bottom of their ramekin, to enjoy the delicious blueberries and oatmeal in each bite!

I changed the brown sugar by the splenda brown sugar mix. Good for diabetics

Wonderful recipe!! The second time we tried it, I substituted Saskatoon Berries for the Blueberries; used Maple sugar (only half measure of what the white sugar is) and then used Coconut oil to fry them. It was a great twist on the original!
