Island Bries

This soft cheese with bloomy rind was a finalist in the 2009 Canadian Cheese Grand Prix. As our best seller, it is always a welcome addition to a cheese platter. With its creamy, mushroomy aroma it’s paired wonderfully with a fruity wine.

  • Aroma Fresh grass with earthy, “mushroom” overtones. Becomes stronger as it ages.
  • Taste Mild and creamy, mushroom.
  • Texture Slightly chalky when young, under the thin rind the body starts to turn creamy with age.
