This non-pasteurized, semi-soft, brushed crust cheese is well matured and its woody aroma and lightly acidulated flavour sways towards fruity. Tomme de Grosse-Île has a buttery fragrance and hazelnut taste, which peps up as it ages. It is also reminiscent of the rich and salty notes of parmesan.
