Colby
Somewhat similar to Cheddar, its curd is not as firmly packed and ground and cold water is added instead. Its ripening period is also shorter that of Cheddar.
Friulano
Also named Furlano or Montasio, Friulano owes its name to the magnificient region Frioul in italy. Fresh and very slightly acidulous, you can't help but fall in "amore" the minute you taste it!
Triple cream Brie
A soft triple-cream cheese with a bloomy rind. It melts in your mouth and has a wonderful taste of hazelnut, mushroom and a hint of butter
