Turnip Mash with Cheddar & Black Pepper

Preparation

What You Need

1 1/2 lb (675 g) turnip
2 tbsp (30 ml) olive oil
1/4 to 1/3 cup (60 mL to 75 mL) milk
1 cup (250 ml) Mild Canadian Cheddar, grated
1/3 cup (75 ml) unsalted butter
Salt
1 tsp (5 ml) cracked black pepper

Instructions

Peel and cut turnip into small cubes. Cook in boiling salted water until tender, then drain well. Puree in a food processor with the oil and the milk until smooth.

Transfer to a clean pan and heat through. Beat in the Canadian Cheddar and 2 tbsp (30 mL) butter. Season with salt to taste. Transfer to a warm serving dish.

Melt remaining butter with cracked black pepper. Pour it over the puree and serve right away.
