Spinach and Feta Rice

Preparation
What You Need
1 tbsp
(15 ml)
butter
1
red onion, chopped
2
garlic cloves, chopped
1 cup
(250 ml)
sliced mushrooms
2
celery stalks, sliced
Juice of 1/2
lemon
1 cup
(250 ml)
white rice
2 cups
(500 ml)
water
3 cups
(750 ml)
chopped spinach
4 oz
(120 g)
Canadian Feta cheese, diced
Salt
Pepper
Cumin
Oregano
Instructions
In saucepan, sauté onion, garlic, mushrooms and celery in butter. Sprinkle with lemon juice and cook for 2 minutes. Add rice and water; bring to boil. Cover and cook rice according to instructions on the package. Remove from heat.
Stir in spinach. Cover and let rest for 10 minutes. Add Canadian Feta cheese and season to taste with salt, pepper, cumin and oregano. Toss and serve immediately. Can be served warm or cold.
