What You Need

choice of
lettuces (curly endive, arugula, lamb's lettuce, etc.), torn into pieces
8 oz
(250 g)
smoked salmon, in thin strips
5 to 8 oz (150 g to 250 g)
Canadian Cantonnier cheese, diced
Drained capers
Olive oil
Freshly ground pepper
Instructions
Arrange lettuce in large plates. Divide smoked salmon among plates and top with Canadian Cantonnier cheese. Garnish with capers. Sprinkle with olive oil and season to taste with pepper.
Serve immediately.
