Maple Cheesecake

Preparation

What You Need

18 Oreo cookies
1/2 cup (125 ml) melted butter
2 pkgs (8 oz/250 g each) Canadian Cream cheese
2/3 cup (150 ml) plain yogurt
1/4 cup (50 ml) maple syrup
1/3 cup (75 ml) sugar
1/3 cup (75 ml) maple sugar or
sugar
4 eggs
Choice of fresh fruit
Maple syrup

Instructions

Preheat oven to 325 °F (160 °C).

Separate cookies, then scrape off and reserve cream filling. Put cookies in a plastic bag and crush with a rolling pin or a bottle. In a bowl, combine crushed cookies with butter. Press cookie mixture into bottom of buttered 9-inch (23 cm) springform pan. Set aside.

In large bowl, beat together Canadian Cream cheese and remaining ingredients, including reserved Oreo creamy filling, with electric mixer until smooth. Pour cheese mixture in cake pan and bake for 1 hour 15 minutes or until toothpick inserted in centre comes out clean.

Remove from oven and let stand for 10 minutes before removing from pan. Transfer to serving platter. Garnish with fresh fruit slices and drizzle with maple syrup.
