Greek Style Giant Shrimp over Capellini

Preparation

What You Need

2 tbsp (30 ml) butter
2 garlic cloves, finely chopped
4 green onions, chopped
1 1/4 lb (625 g) giant shrimp, shelled and cut in 2 lengthwise
Fresh basil
Fresh oregano
Salt
Pepper
Hot sauce
3 tbsp (45 ml) finely chopped pitted olives
1/2 cup (125 ml) dry white wine
2 tomatoes, trimmed and diced
1 lb (500 g) capellini, cooked until 'al dente'
5 oz (150 g) Canadian Feta cheese, cut in cubes
Pitted olives

Instructions

In skillet, sauté garlic, green onions in butter for 1 minute. Stir in shrimp and sauté for 2 minutes while stirring. Season to taste with basil, oregano, salt, pepper and hot sauce.

Stir in olives and wine. Bring to boil and reduce to half. Remove from heat and stir in tomatoes gently. Serve immediately over bed of capellini. Garnish with fresh herbs and serve with cubes of Canadian Feta cheese and olives on skewers.
