Crispy Cheesy Veal

Preparation

What You Need

1 French baguette, sliced in 2 lengthwise and then cut in half
Olive oil
Italian seasonings
10 oz (300 g) veal, trimmed of fat and cut into thin strips
1 large tomato, diced
1/2 onion, chopped
Salt
Freshly ground pepper
1 cup (250 ml) grated Canadian Mozzarella cheese
1/2 cup (125 ml) grated Canadian Parmesan cheese

Instructions

Brush top of bread pieces with olive oil and sprinkle with Italian seasonings. Grill on barbecue for a few minutes on each side until golden. Set aside.

Thread veal strips on skewers. Grill over medium-high heat for a few minutes, turning occasionally. Place bread pieces in baking pan. Top with grilled veal strips, tomato and onion. Season to taste with salt and freshly ground pepper.

Sprinkle with Canadian Mozzarella cheese and then, with Canadian Parmesan cheese. Grill in oven for 2 to 3 minutes or until cheese is golden.

Remove from oven and serve 1 piece of baguette per person with sliced avocado, sprinkled with your favorite vinaigrette.
