Creamy Spinach and Pine Nut Rolls

Canadian Cream cheese, softened
1 cup
(250 ml)
grated
Medium Canadian Cheddar
1/2 cup
(125 ml)
sour cream
1/2 cup
(125 ml)
chopped tomatoes
4
green onions, chopped
1 cup
(250 ml)
chopped cooked and drained spinach
Juice of one
lime
Salt
Pepper
Pinch
of
Cayenne pepper
1/2 cup
(125 ml)
pine nuts, roasted
6 to 8
large tortillas
Instructions
In bowl, combine Canadian Cream cheese and Canadian Cheddar cheese with all ingredients, except tortillas. Mix well. Season to taste with salt, pepper and Cayenne pepper.
Generously spread each tortilla with cheese mixture and roll up very tightly. Wrap with plastic wrap and refrigerate for 2 hours. Remove plastic wrap and cut each tortilla into 8 to 10 slices. Arrange on serving dish and serve immediately.
