Cottage Cheese Pasta

Preparation

What You Need

4 cups (1 l) short pasta
1 1/2 tbsp (22 ml) butter
1 onion, finely chopped
2 cloves garlic, minced
1 lb (450 g) lean ground beef
2 1/2 cups (625 ml) homemade or
store-bought tomato sauce
1/3 cup (80 ml) pitted kalamata olives
1/4 cup (60 ml) chopped fresh basil
8 oz (250 g) Canadian Cottage Cheese
1 1/2 cups (375 ml) grated Canadian Provolone
Salt
Freshly ground pepper

Instructions

Cook pasta al dente according to instructions on package.

Set oven to broil.

Meanwhile, in an oven-proof casserole, melt the butter and sauté the onion and garlic.

Add the ground beef and cook through completely, breaking it up with a wooden spoon.

Stir in tomato sauce, olives and basil. Season.

Bring to a boil, add cooked pasta and Cottage Cheese.

Sprinkle with Provolone and place under broiler.


Tips

Canadian Ricotta is a savoury alternative to Cottage Cheese, while Canadian Gouda, Swiss or Mozzarella can be used instead of Provolone.

    I used the mozzerella cheese and it was fantastic...I omitted the olives as my family aren't big fans, but used olive oil... worked out great!

    Don't bother with this recipe!! The taste was disappointing considering the expensive olives, cottage cheese and provolone. I fed the leftovers to the dogs!!

    have to say that I have never tried olives in pasta before - it works!

    Swap out the beef with lentils or soy crumbles to cut WAY down on the saturated fat and calories and really bump up the fibre! My family prefers to use TVP (textured vegetable protein, a dry, unflavoured product you soak in liquid before use) and since none of us are fans of olives we add half a package of frozen spinach that we thaw and drain well.
