Belgian Potatoes

What You Need

6 large potatoes , peeled and quartered
2 leeks, chopped
12 celery stalks, chopped
3 tbsp (45 ml) melted butter
2 egg yolks, beaten
8 oz (250 g) Canadian Monterey Jack, grated
Salt
Pepper

Instructions

Preheat the oven 350 °F (180 °C).

Cook potatoes in big pot of salted boiling water 10 minutes. Add leeks and celery. Simmer 15 minutes.

Drain vegetables. Purée in blender (or food mill). Transfer vegetable mix to big bowl and beat in butter, egg yolks, half of the Canadian Monterey Jack cheese.

Pour vegetable mix into buttered baking dish. Bake 20 minutes. Sprinkle with rest of cheese and put under broiler for 2 minutes. Serve.
